Valpolicella Ripasso Classico Superiore
Our Valpolicella Ripasso Classico Superiore is produced on the hills of Marano di Valpolicella, in an area at the heart of Valpolicella Classica, from native grape varieties including Corvina, Corvinon, Rondinella, Molinara and Useleta, grown in our vineyards and harvested exclusively by hand.
The first fermentation takes place spontaneously in stainless steel, without the addition of selected yeasts. The Valpolicella is then refermented on the Amarone grape skins, following the traditional Ripasso method. This process gives the wine greater structure, complexity and intensity while preserving the elegance and freshness typical of Valpolicella.
After refermentation, the wine is aged for several years in traditional large oak barrels, where it develops slowly and reaches a natural balance without losing its fruit character.
The result is an elegant, structured and well-balanced Valpolicella Ripasso Classico Superiore, with aromas of ripe red fruit, cherries and pleasant spicy notes. On the palate, it is smooth and enveloping, with good structure and a long, persistent finish.
This wine combines the freshness of Valpolicella Classico with the greater complexity gained through its second fermentation on the Amarone grape skins, expressing the character and tradition of Valpolicella Classica.
It pairs particularly well with rich pasta dishes, red meats, roasts, braised meats and aged cheeses.
