Valpolicella Ripasso D.O.C. Classico
Terroir: Our vineyards are situated in Valgatara, at the heart of Valpolicella, at an altitude of 200-300 meters above sea level. The diverse soil, rich in limestone and well-drained, sets the stage.
Vineyard: Embracing the traditional Veronese pergola system, most vines bask in the southern sun, perfect for cultivating premium grapes.
Grape Varieties: Corvina Veronese 65%, Rondinella 30%, Molinara 5%.
Alcohol Content: 14.00% by volume.
Harvest: Manual harvest takes place at the end of September and early October.
Winemaking: Fermentation occurs in stainless steel tanks for about 10-12 days during harvest, with controlled temperatures. The wine is then refermented on the still-warm and sugar-rich Amarone pomace immediately after the Amarone is racked.
Aging: Aged in oak barrels for approximately 2-3 years, and a minimum of 6 months in the bottle.
Tasting Notes: A full-bodied wine with a ruby red color, tending towards garnet with aging. Intense aroma of ripe fruit and berries. Persistent on the palate with hints of vanilla, mature cherry, tobacco, and spices.
Pairings: Grilled red meats, game, and aged cheeses.
Serving Temperature: 16°C - 18°C.
