Our Amarone della Valpolicella Classico Riserva is one of the rarest and most important expressions of our winery. It is not produced every year, but only in those vintages when the quality and characteristics of the grapes meet the standards we seek for our Riserva.
Its production begins with an exceptionally rigorous selection. From the grapes already carefully selected and harvested by hand for our Amarone, we make a further selection of the finest bunches, choosing for the Riserva only those that show the characteristics we are looking for.
The selected bunches are placed in traditional wooden crates and taken to our drying room, where they are left to dry naturally. During this slow process, the grapes become naturally concentrated, developing greater structure, complexity and aromatic richness.
Once the drying process is complete, the grapes are pressed and fermentation takes place spontaneously in stainless steel.
The wine then undergoes a long ageing period in traditional large oak barrels, where it evolves slowly, developing depth, balance and elegance while preserving its fruit character and connection to the territory.
The result is an intense, profound and elegant Amarone della Valpolicella Classico Riserva, with aromas of ripe red fruit, spices and more evolved notes that gain complexity over time. On the palate, it is rich and enveloping, with an important structure and a long, persistent finish.
Produced in extremely limited quantities and only in the vintages we consider the finest, it is the result of a double selection: first the grapes destined for our Amarone and, from these, only the finest bunches are chosen to become our Riserva.
A wine made for time, ideal with red meats, braised meats, game and aged cheeses, or to be enjoyed slowly on its own as a meditation wine.
