Recioto of Valpolicella D.O.C.G. Classico
Terroir: Our vineyards are located in Valgatara, at the heart of Valpolicella, at an altitude of 200-300 meters above sea level. The diverse soil, rich in limestone and well-drained, forms the foundation.
Vineyard: Embracing the traditional Veronese pergola system, most vines face the southern sun, ideal for cultivating prized grapes.
Grape Varieties: Corvina Veronese 65%, Rondinella 30%, Molinara 5%.
Alcohol Content: 13.00% by volume.
Harvest: Manual harvest takes place in September, with skilled individuals selecting the finest clusters.
Winemaking: After three months of drying, it's vinified in stainless steel tanks for 15-20 days with controlled temperatures.
Aging: Aged in stainless steel vats for about a year, and at least 6 months in the bottle.
Tasting Notes: Intense red color, expansive aromas of almond blossoms, blackberries, and marasca cherries, with hints of chocolate and sweet notes of vanilla. On the palate, it's warm, harmonious, persistently lingering, with hints of dried fruit, licorice, and a note of dried grapes on the finish.
Pairings: Dry pastries, dark chocolate, dried fruits, and chestnuts.
